What to do for a little family fun this winter?
We enjoy making popcorn & hot chocolate, after a cold day of sledding or ice skating.
I don’t know about you, but my love for popcorn, goes way back to my childhood. My dad would make popcorn and Root Beer floats on Sunday nights. I can still see him tossing a kernel into a pan of hot oil to check the temperature. Then he would toss and flip the popcorn as it popped in the pan. It was magical to watch and perfect every time.
I cheat and use an hot popper that was a wedding gift over 30 years ago.

Sherri’s Carmel Corn
I give it as gifts and share it with family and friends. It is also totally gluten free! I hope you will enjoy making it!

- 6 quarts of popped Corn in a large bowl ( set aside)You may pop the corn ahead of time. Lady Finger is our favorite. It just melts in your mouth.

Preheat oven to 250 degrees.
Optional: Add: 1/2 – 1 cup of nuts (we love pecans.)
In a 4 quart heavy bottom pan:
- Add: 1 cup or 2 sticks of real butter
- 2 cups brown sugar
- 1/2 cup of Corn Syrup
- 1/8 teaspoon Cream of Tartar
- 1 teaspoon Sea Salt or Kosher Salt
Melt and Stir constantly for 5 minutes (at least) remove from heat and add:
- 1/2 teaspoon of Baking Soda & 1 teaspoon of Vanilla (My favorite is “Haitian”)
Stir thoroughly, you may see Carmel begin to foam at this point. Pour over the dry popped corn and nuts. Stir quickly as the Carmel will begin to harden. Once evenly coated I transfer to a large roaster pan. Bake for 1 hour, stir every 20 minutes, until Carmel corn gets evenly browned. It will begin to have a glossy amber color.
Making any type of Carmel is very hot and may be dangerous if spilled on skin.
